1) Tajine

Also written Tagine, for its pronunciation. It is a traditional and essential dish in Moroccan cuisine and other North African countries such as Tunisia and Algeria.

One of the characteristics of the Tajine is that it is cooked in a terracotta bowl that has a conical lid. Thanks to this container, heat and steam are kept during and after cooking, condensing in the upper part, falling back on the food and preventing it from drying out while cooking. The container where the Tajine is cooked is a very characteristic element of the country and you will see that it is sold as a souvenir in many souk shops.

There is a great variety of tajines. Some of the most common are chicken, lamb, kefta (meatballs), vegetables, tuna, etc. The food is fried first and then stewed over very low heat. The dishes can be seasoned with a wide variety of salty or sweet ingredients, honey, fruits, nuts and spices.

If you go to Morocco, do not forget to try the tajine because you have variants for all tastes and it is really delicious.

2) Couscous

Couscous is a traditional Moroccan. The ingredients are wheat semolina, vegetables, chickpeas and red meat. Although like the tajine, we can find different variants where the red meat is replaced by chicken, lamb, etc. It can even be a totally vegetarian dish.
In addition to being one of the specialities of Morocco, couscous is also a staple in the kitchens of other North African countries, such as Algeria, Tunisia, Mauritania or Libya.

Depending on the country, the couscous is prepared in one way or another. But normally it is made to accompany dishes of lamb, chicken (typical in Morocco) and vegetables, all accompanied by the indispensable harissa, puree of dried red hot peppers. The couscous in Morocco is delicious! Do not stop trying it, you have for all tastes !.

3) Harira Soup

Harira is a traditional Moroccan soup made with meat, tomatoes and vegetables. Apparently, it is also one of the best dishes in Marrakech and when we were there, the owner of the riad prepared us a Harira soup to welcome us. The soup was really delicious and we could take it on the terrace of the top floor of the riad, with an unbeatable view over Marrakech. The experience was incredible!

Although it is consumed all year round, the Harira is also typical during the month of Ramadan due to its high nutritive power. It is the dish that breaks the fast and is usually accompanied by dates or Chabakia (typical dessert).

4) Mint tea

Tea is a widespread tradition in the country and is taken daily almost any time. It is very common that when you meet someone or come to a place, they welcome you by offering you tea. When I was in Morocco I think it took about 5 cups of tea a day at least, the merchants invited me to drink tea, when we came to a new place too, in the riad, at breakfast, at lunch, etc. I was delighted because I like tea and Moroccan tea is delicious!

One of the most typical teas in Morocco is the mint tea, but there are other types of delicious tea, such as Royal tea.
